Sep 1, 2022 · Admittedly, I also am sensitive to salt as a flavor so YMMV. Anyway, let rest/marinade and cook as usual. I prefer initial cast iron sear and either covered on stove top or oven finished, depending on thickness of cut. Reverse sear has never been very successful. Generally prefer medium rare, and the cheap-ass chuck roast melts like a prime filet.
